I was recently invited to a pig roast with a community of farmers. With the whole farm to table movement in full swing, I was excited for an opportunity eat at an actual farm, with actual farmers. I literally jumped at the opportunity to eat freshly butchered, roasted pig, right off the grill. Needless to say I had an amazing time.
The Grill – The grill was constructed (yes constructed) out of cement blocks and chicken wire. Two pigs were butchered, butterflied, laid on the grill, and subsequently covered in tin foil to lock in heat and moisture. The pigs took several hours to finish cooking, during which time beers were drunk, lawn games were played, and a paintball gun was used for target practice.
In order to properly prepare for the succulent masterpiece that is grilled pig, we took a ride in the back of a pickup truck. There may or may not have been a few sips of Jim Beam taken, in true country-style. I can’t say that there is anything better than a cool fall day, orange leaves, a breeze in your hair, whiskey in your mouth, and the smell of pig permeating the air.
The pigs (yes multiple pigs were served), roasted and grilled to perfection, were served atop a makeshift wooden table. A bowl of coleslaw was placed atop the table in the middle of the pig, and a collective horde gathered around the feast to eat. There were forks for the salad, other than that people just reached in and ate with their fingers. Succulent pieces of pork, dripping with juices made their way to my mouth, and it was good. Tender pieces of meat coated with bbq sauce were consumed. Crispy pieces of skin, coated with beautiful globules of fat went into the mouths of vegans, vegetarians, and omnivores alike. Moans were heard and all were content with the feast and gluttony.
I have never had a better meal, among better people. It wasn’t just the fact that I was bathed in pork as God intended, it was the company. It’s always the company, sharing food with good people makes it all the better. It was a simple meal, with simply the best people, and it was good.
